Yummy-Licious Shrimp...Oh My!!
Well I have always wanted to make Shrimp Oreganata...but I never did....so I decided to do so now! Since I made Shrimp Scampi a couple of weeks ago I decided to try something new. I am not much a of seafood person but I like shrimp so I decided to explore!
Boy was it worth exploring! I had to call my Aunt Lillian to find out just how my Uncle Billy prepares it. (THANK YOU UNCLE BILLY!!!!) They bring this to my house every year for Christmas Eve and I love it!!
It turns out I bought the wrong bag of shrimp so I had to de-shell every single one of them! That added time to my prep but it was well worth it!
This came out delicious and my whole family loved it! I had to decide what to make on the side, so I decided to make some roasted brussel sprouts with parsnips and a side of Cous Cous with some dried cranberries, walnuts, pistachios, pumpkin seeds and a whole bunch of other seeds and nuts combined!
It was a great dinner for sure and I will definitely make it again! I hope you enjoy it too!!
RECIPE ALERT:
SHRIMP OREGANATA
Make sure your shrimp are all cleaned, peeled and deveined. In a medium bowl whisk lemon juice and olive oil (1 part each) and soak the shrimp in this mixture until you are ready to bread the shrimp. Prepare about 4-5 lemons thinly sliced on a board (enough to place in between each shrimp as seen in the photo) In another bowl mix flavored breadcrumbs with unflavored panko.
Take out each shrimp one by one and bread in the breadcrumb/panko mixture. Place in a tray sprayed with Pam and place one slice of lemon in between each shrimp. Continue to fill your tray until you are ready to place in the oven.
Bake at 450 for 25 minutes or until golden.
For the Veggies...
Slice the brussels sprouts in half, peel and slice parsnips into bite-size pieces. Drizzle olive oil, salt and pepper to taste, add some water and place in the oven until tender enough (to your liking)
Cous Cous...
Prepare as directed on package, add your favorite ingredients. I happened to buy a box of dried fruits, nuts and seeds and added it to my cous cous.... Have fun! Use your imagination! Take it to another level and explore....the sky's the limit!!!
The beauty of cooking is that you have to close your eyes and just imagine....what would taste good with this meal....and create it! Most of my dishes are things that I decide to put together and they work. I don't measure....I just "feel" what I think will taste good! Always remember my rule of thumb...Never add too much because you can't take it out....add less so you can add more if need be!
I am not really your ordinary cook, with an ordinary recipe book...I am trying to teach YOU to create YOUR OWN flare! To learn to be creative and learn to actually "feel" what you are cooking! If you're not really quite fond of being in the kitchen it may take a few times to get it. But I encourage you to try! It will be fun and you will be proud of what you made and will want to share your creation with your family and friends!
