HAPPY ST. PATRICK'S DAY!!
Usually I make the usual Corned Beef and Cabbage but this year was a little different! In honor of St. Patrick's Day I thought it would be fun to make Spinach Rice Balls and Eggplant Parmiggiano on a nice loaf of semolina bread!
I sliced the eggplant rounds pretty thin and breaded them. Then I baked them in the oven. My mother in law still fries them! Boy do I know they taste AMAZING when they're fried, but they are even better baked! It is definitely the healthier choice!
I prepared a quick sauce and had a bag of shredded mozzarella in the fridge. I also took out a loaf of semolina bread that I had in the freezer. I thawed out the bread for about 15-20 minutes then put it in the oven to heat up for about 10 minutes. I cut the bread and added the breaded, baked eggplant rounds, put some sauce on it with my "cuppino" or ladle...hahhaa Added the shredded mozzarella and stuck it back in the oven until the mozzarella melted.....Voilaaa you have a nice, quick, easy and healthier version of Eggplant Parmiggiano!!!
The rice balls were also a quick version. I took a few short cuts and they were delish!!! Madrina Sylvia told me to save her a few...but I did better than that! I showed up at her house with a container of rice balls!! She was soo happy!!!
