SNOW DAY!!!!

Who doesn't love a snow day!!! I'm still wearing my PJ's and it's 2:30 in the afternoon! Here's what Rascal's doing...

When I'm snowed in what do I think about??? Food and Cooking! Let's talk about EGGS!

First and foremost, I only buy farm fresh organic eggs. The color of the egg doesn't matter...if the white ones are cheaper I buy those and vice versa with the brown ones.

It has crossed my mind to buy a chicken coop for the yard. A friend of mine has one and he gets fresh eggs everyday!! My only worry is, how will Rascal feel sharing his yard with a bunch of hens!! LoL

How do you like your eggs??? I like mine well done...No runny eggs for me! YUCK! But the rest of my family loves runny eggs so I had to learn how to make them so I can keep the troop happy!

Thinking back to when I was a kid, my mother used to make us just the red of the egg (the yolk) and whisk it just a little bit and add sugar and we used to dip our toast into it for breakfast! Why didn't we get sick eating raw eggs back then??

Today we are told we shouldn't lick the spoon to the cake batter because we can get salmonella poisoning! There was nothing better than licking that spoon of raw batter!

My friend, Cathy, told me she makes, "Rocky Mountain Eggs" (TOP) and just recently my friend, AnnMarie, told me about a trick where I don't need to flip the egg when making them over-easy (BOTTOM) Thank you Annie..mwah

RECIPE ALERT:

To make Rocky Mountain Eggs, all you need do is spray your pan with Pam, get a cup and make a hole in the middle of your slice of American Bread. Place the bread on your pan and crack the egg in the center hole and sprinkle some salt and pepper to taste. It makes it very easy to flip so you can make your eggs over-easy or you can simply put a lid from one of your pots over the pan and let them cook for as long as you'd like, depending upon how you like your eggs.

The same goes for the eggs on the right. Spray your pan with some Pam (it's the healthier choice) crack the eggs into the pan and sprinkle salt and pepper to taste. Cover you pan with a lid and let cook for as long as you desire, depending how you like your eggs!

For all you Pizza Lovers out there!! You can make a Breakfast Pizza!! All you need to do is buy a Pillsbury Dough, add some pam on the pizza pan and stretch out the dough. Make your scrambled eggs, cook your bacon and choose your shredded cheese, I use shredded cheddar or Mexican Blend or even provolone or Mozzarella. Basically, I use whatever I have in my fridge. LoL

Let the eggs cool and spread evenly over the dough, sprinkle with some salt and pepper to taste, add your crumbled bacon and top with shredded cheese. Bake at 350 for about 15-20 minutes, or just until cheese is melted! Its's quick...It's easy and it's fun for the whole family!

Your kids can make this and surprise you with breakfast in bed!!

The beauty is that you can customize this to make it your own. You can add some guacamole on top, sour cream, chives, mini tater tots...the skies the limit!!
