Let's Talk Guacamole...
When I shop for fruits and vegetables I always check the avocados, just because its nice to have a few avocados in the kitchen. They are very versatile! You can add them to any salad, you can add them to fried or grilled chicken, you can use it in any cold-cut sandwich instead of mayo or mustard! My favorite thing to make with avocados is GUACAMOLE! I love it so much I could eat it for breakfast, lunch and dinner! When I traveled to San Diego I actually did just that!
Today, after school, my son, Michael, saw the avocados in the kitchen and asked if I could make him some guacamole. I told him he could make it! I sat there and handed him some vine tomatoes from the fridge, purple onion, fresh cilantro, a fresh lime , salt, pepper and garlic powder. I gave him the chopper and told him,"Ok, make it!"
He NEVER made it before and he was a bit nervous. But he insisted to show me something he learned on how to cut an avocado perfectly. So I gave him a cutting board and he chose the knives and I sat and watched. It was great! Here's a few pics step-by-step on how to make quick, delicious guacamole.
RECIPE ALERT:
Peel 3 avocados and smash in a bowl (if you like it chunky)
Chop 3 vine tomatoes (take out all the seeds) and place in the chopper
Add a few Cilantro leaves into the chopper
Add about 1 tblsp. purple onion finely chopped
Garlic Powder to taste
Black Pepper to taste
Salt to taste
Juice of 1 lime
Mix everything together and add ingredients as needed according to your preference.
Certain things are very difficult to give you precise measurements. Something like guacamole is usually made according to your own personal preference. Some people like it creamy while others may like some texture and keep the avocado and tomato a bit chunky.
My vision is to create cooks that don't have to follow recipes step-by-step and to teach you how to add your own flair to each dish! When you cook, I want you to close your eyes and imagine what will make your meal taste GREAT! How much salt do you prefer? How spicy do you like your food? Think about the color, the texture, and especially what type of flavor you are looking for. It will take you a couple of times to figure it out but I will give you one rule of thumb that is applicable to any meal you make: IT'S BETTER TO HAVE TOO LITTLE THAN TOO MUCH! You can always add more if it's not enough, but if you start with too much, you can't undo that! Keep this in mind and it will help you adjust the flavor to your liking.
